The Cabernet Sauvignon grapes come from the Colchagua Valley, Chile renowned for making excellent red wines. In Colchagua, the moderating breezes from the ocean slows ripening allowing the wines to achieve perfect ripeness. Cool nights help retain acidity giving freshness to the wines. All grapes were hand harvested. Deep, ruby red in colour.
This has full ripe Pinot Gris spiciness in the nose, with a lovely lemon lift. It is medium weight, but with a full, stony impact on the palate, where it is long and satisfying with good acidity. No malolactic fermentation is allowed, so the wine retains a bright crisp citrus acidity. Attractive peach fruit. creamy texture, very slightly off-dry.

Big Easy Cabernet was sourced from the Helderberg region within Stellenbosch, with selected parcels from different coastal regions to complete the blend. A blend of Cabernet Sauvignon with Feteascå Neagrå, also known as `Black Maiden` which is one of Romania`s oldest black grape varieties. The nose is intense and full of blackcurrant aromas with notes of coffee and pepper.
Vineyards around Lake Kaltern are very small in size and most of the winemakers in the region have less than one hectare of land, for a small winemaker it is virtually impossible to make and market their own wine so the co-operative of Kaltern was set up in 1906 with the goal of producing high quality wines.
Lifted peppery spice leads into an herbaceous mix of blackberries, currants and cloves. The partial Amarone method produces hints of liquorice, tar and leather whilst remaining fresh and vibrant. The youthful tannin structure will evolve over the next few years to become soft, supple and smooth.
