Vinification : Sorting of the harvest, destemming and crushing. The vatting lasts between 30 and 35 days with punching down at the start of alcoholic fermentation, while the vinification temperature does not exceed 28 ° Celsius. The malolactic fermentation takes place in barrels.
Aging : Aging for 22 months in oak barrels (Tronçais), 1/3 new barrels, 1/3 one-wine barrels and 1/3 two-wine barrels, no filtration, bottled at the Château, storage at the property
