The wine grape goes by many names - raisin in France, uva in Italy, Spain, Portugal and South America, traube in Germany and good old grape in English speaking countries. In all countries, its the grape that is the key to making great wine. Tannin and colour (for red wine) comes from the skin, while flavour comes from the fruit sugars, acids and traces of minerals in the pulp. The composition of these elements change during the ripening process, which is why the timing of picking the grape is so critical to winemakers around the world.
