Super Dry is a special alchemy edition from Horse Kick Cider, made using the juice of Apples (Cox, Dabinett, Robijn & Tom Putt) Crab Apples (scrumped from the gardens of Surrey) and Medlars (an ancient English fruit). Pressed in October 2020, matured in Pinot Gris Oak barrels over winter, fermented with wild yeasts and bottled in May 2021. This single batch, bone-dry cider has heavy tannin and lip-smacking acidity. No sterilisation (use of sulphites or pasteurisation) means a natural effervescence thanks to the bottle conditioning process.
Like the rider on the label (drawn by The Wine Reserve's very own Matt Illman) this very dry cider bursts upon the scene with focussed intensity and flavour.
