Colaboration between Sophie Bollaert and Julien Schaal This comes from an exclusive single block. The vines are probably amongs the oldest of the appellation giving fine and concentrated grapes. The Elgin "Cape`s coolest climate" helps to conserve the finest natural acidity. The soil is very stony and mixed with red clay. The North exposition on a gentle slope allows the grapes to get ripe very slowly. In the mouth this is supple and incisive, it is smooth and easy to drink, it is overflowing with white flowers and citrus fruits as well as the typical touches of nuts and almonds, it has citrus hints and extreme finesse.
