The Syrah grapes come exclusively from the Hemel-en-Aarde valley. Made by young Alsatian winemaker Julien Schaal. The grapes are picked by hand at the coolest time of the day and are then hand sorted. After 4 days of cold maceration the wild fermentation starts slowly and lasts for around 18 days. Then the wine is gravity fed into 900 litre barrels (sourced from Burgundy).The wine is aged 12 months before bottling. Rich and well balanced this wine possesses a perfume of mixed spice and a palate of soft blackberry flavours.
