Although Pinot Grigio is best known for the production of white wines, the grapes actually have a pink tinge to them when they are ripe. The wine gets its delicate pink colour from contact with the grape skins during the winemaking process.
The grapes were crushed and pressed before fermentation took place in controlled stainless steel tanks at temperatures between 13-16°C. After pressing, further skin contact was avoided to avoid extracting too much colour or tannin. A vivid pink colour, this wine exhibits an intense perfume of red fruits with hints of strawberry and cassis.

The grapes were destemmed and crushed where after they macerated on the skins for between 1 – 3 hours before being pressed. After settling for 2 days, the wine was racked and inoculated with local white wine yeasts. Plummy Merlot combined with summer-berry flavours of Shiraz add complexity to this dry fruity rosé.
