Light, golden amber colours, clean and round with nutty sherried notes and burnt sugar on the nose. Light and fruity with oranges, raisins and a touch of coffee on the palate. Finishes with a bite of spirit and some lingering sweetness.
Madeira is a fortified wine that depends upon heat and evaporation to createconsistent long lasting styles. The must is fortified, either to arrest fermentation for a Malmsey or a Bual, or later in the fermentation process, in the case of Sercial or Verdelho before undergoing its own very special maturation.
The Amarone marc is pressed, and the resulting liquid is distilled to produce a distillate of about 75 % alc. Distilled water is then added. Before being bottled, the distillate (brandy) is refrigerated at a temperature of about - 10° c. for about 48 hours and then filtered. The Grappa ages in oak barrels for 12 months
Old gold amber colour. The nose brings notes of spice, liquorice, orange peel and even dried figs. In the mouth, the aromatic strength of this Cognac is exceptional and opens up with notes of hazelnut, walnut, cedar wood then candied fruits. Great length characterises this XO.
