In the vineyard the vines are pruned, the shoots thinned and trimmed, to ensure favourable canopy conditions. A long, dry ripening season resulted in fruit with intense varietal character. The fruit is harvested from the `Terrace Orchards` vineyard of Steve and Linda Hammond, the `Willow-Lea` vineyard of Kenneth and Carolyn Coles, and the `Awatere River` vineyard of Geoff and Diane Smith. The majority of the fruit is machine harvested in cool morning or evening conditions, and pressed with minimal skin contact. The clear juice is then fermented at very low temperature with selected yeast strains to retain the fruit`s varietal flavours.
