Classic benchmark Manzanilla. La Gitana is made from Palomino Fino grapes that are carefully cultivated in white Albaniza soils (+80% calcium carbonate) highly prized for obtaining very fine and high quality musts. The grapes come from the Finca El Cuadarado located in the historic area of ??Balbaina Alta. It is considered one of the areas with the greatest Atlantic influence of all the areas of Jerez Superior. The must obtained from this estate has perfect characteristics for the ageing of Manzanilla and is the reason for its particular salinity. The wines enter the soleras, which date back to 1792, and spend three years in the San Fermin Winery in the lower district of Sanlucar, where they are directly exposed to the river (300 metres from the riverbank). After three years, they go to the main winery in San Fermin for another two or three years, where they finish being refined and polished in the large barrels that date back to the beginning of the construction of the winery and that have never been moved from their original location. During all this time (5-6 years) the wines have passed through the Criaderas and Soleras system always under the continuous care of the Flor veil that makes this wine a miracle and protects it from oxidation. The fact that San Luis is the Catedralizia winery closest to the River/Atlantic means that the flor is thicker than in any other winery in the area.
