This 5 Year Old Madeira starts life as fermenting must and is then fortified before undergoing its own very special maturation process. Made of predominantly Tinta Negra Mole Grapes, harvest begins from mid-August due to the warm southerly climate.
The Chase Fruit Cup is made by passing Chase Vodka through the evaporation chamber or their gin still in order to infuse it with a blend of 17 botanicals. Along with the botanicals, the Fruit Cup is combined with elderflowers and locally sourced raspberries and blackcurrants to create this beautifully summery drink.
Sercial is the driest style of madeira and exhibits mouthwatering acidity. Golden orange in colour, the wine displays vivid floral aromas, with nuts and dried orange peel on the palate. This is a complex wine with balanced acidity and a lengthy finish.

Madeira is a fortified wine that depends upon heat and evaporation to createconsistent long lasting styles. The must is fortified, either to arrest fermentation for a Malmsey or a Bual, or later in the fermentation process, in the case of Sercial or Verdelho before undergoing its own very special maturation.
