"The 2012 Cos d'Estournel is a blend of 75% Cabernet Sauvignon, 22% Merlot, 2% Cabernet Franc and 1% Petit Verdot. It has a deep garnet-purple color and reveals expressive black cherries, black raspberries and red and black plums scents with subtler notes of cassis, menthol, pencil lead and cigar box plus a touch of lavender.

The jewel of Caroline’s Premiers Crus, this is as splendid as ever. She has just over one hectareThe nose is deep and mineral, almost saline, and with notes of cinnamon and pepper. The palate is profound, long and layered, yet not overt and still carrying the vintage’s solidity. It’s a fascinating wine, one for the longer term. 

"The 2017 was a hot vintage in the Hunter Valley and even though alcohol is restrained, the warmth of the season is still felt in this wine. The nose is initially reductive so decant if drinking now. With air, notes of ripe blueberry, cherry, plum, dried rose and peppery spice make their way out.

"With blackberry, dark-chocolate and smoked-meat character. Full body, silky tannins and a long, intense finish. All about balance and polish. Very fine. Needs three to four years to soften. Try in 2017". - James Suckling, Feb 2014.

Billecart`s calling card, a reference point amongst rosé champagnes with amazing finesse and great intensity. The Brut Rosé is a blend of Chardonnay, Pinot Meunier and Pinot Noir vinified as red wine. A pale yet radiant pink colour adorned with warm glints of gold.

This Billecart cuvée is a blend of two different years to compliment the character of the Chardonnay. With aromas of dried fruit, almonds and fresh hazelnuts and white flesh fruits, the creamy sensation of the fine mousse of delicate bubble combines with buttered brioche and minerality.

Very deep crimson in colour. Definitive Mount Edelstone shiraz aromas of sage and crushed black pepper lead to brightly spiced plum, blue and black cherry characters, enveloped by crushed flowering herbs with cedar nuances.

Pio Cesare own 70 hectares of vineyards in the hills of Barolo and Barbaresco, including some of the prime sites for growing Nebbiolo including 16 hectares of the ‘Ornato’ vineyard in Serralunga d’Alba and 10 hectares in Mosconi in Monforte d’Alba, two of the best vineyards in the Barolo area.

A medium smoky-peaty base is enriched by a sweet maltiness and notes of baking spices and dried fruit. Full on the palate and very long on the finish. This is a whisky to enjoy late into the night. Drink it neat or with water, or try pairing it with rich cheeses.

Billecart-Salmon Cuvee Louis Blancs de Blancs is surely one of the finest examples of this style. There is a creamy, tactile sensation on the palate with a graceful finesse and a beautifully refreshing balance with natural flavours of lemon zest, wild peaches and white pepper.
