
Spain is finding success today with fresh, exciting wines made with modern techniques, like Albariño, as well as traditional Spanish wines that have been barrel-aged for several years, particularly in Rioja and Ribera del Duero. Spain is also famous for Cava, the Spanish sparkling wine made in the méthode champenoise. Sherry is a fortified wine made from white grapes from the Southwest corner of Spain: Fino (from Jerez, pale, fresh, bone dry), Manzanilla (from Sanlùcar de Barrameda, bone dry, fresh acidity, salty), Amontillado (amber, smooth, nutty), Oloroso (dry, full-bodied, long-lived), Cream sherry (sweetened Oloroso, sticky sweet and spicy if sweetened with Pedro Ximénez grapes).
